Seafood Risotto

 

Celebrate the warmer, brighter weather with this Italian risotto dish cooked with fresh seafood. The light yet hearty shrimp combined with the delicious crab makes for a tasty meal to enjoy with friends and family. Follow the easy steps below to make a delicious dish that everyone will surely love!

Ingredients:

  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 package shrimp (30-40 shrimp) frozen
  • 1 package crab frozen
  • 1 Onion chopped
  • 1 clove garlic minced
  • 1 Tbsp tomato paste
  • 1 cup finely chopped dill
  • 4 cups chicken broth (instead of water for the rice)
  • 1 cup of Arborio rice 

Directions:

  1. Get large frying pan.
  2. Saute onions and garlic in olive oil and butter.
  3. Add shrimp.
  4. Season with salt if want.
  5. Saute until just pink.
  6. Remove only the shrimp and place on side dish.
  7. Add rice to onions/garlic mixture.
  8. Stir for 1 minute until coated.
  9. Then add tomato paste. Season.
  10. Add chicken broth (hot) a little bit at a time ie 1 cup at a time until absorbed and then add another cup.
  11. Repeat until all chicken broth is absorbed and have nice and creamy texture.
  12. After 4th cup of chicken broth added, put shrimp back in and add crab and dill.
  13. Adjust seasoning according to taste.
  14. Let stand for 10 minutes.
  15. Sprinkle with more dill.
  16. Serve and enjoy.
