Maple Walnut Cookies
As Fall approaches and our young ones are headed back to school in non-traditional form, a healthy AND tasty snack is necessary to alleviate the trying times that are ahead of us. This month, we would like to share this easy-to-make cookie recipe - fun for you and for the kids. These cookies are Paleo diet-friendly, gluten-free, refined sugar-free and vegan. They contain better ingredients for your teeth than mainstream desserts, without compromising any taste bud satisfaction. These cookies are a great treat for your kids to take to school and enjoy at home with you.
Ingredients:
- 1/2 cup creamy almond butter
- 1/3 cup maple syrup
- 1/2 cup coconut flour
- 1/2 cup chopped walnuts
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
Instructions:(Makes 11 maple walnut cookies)
- Preheat the oven to 375 degrees Fahrenheit
- Add the almond butter, maple syrup, vanilla extract, and salt, then mix well
- Add the coconut flour and mix well
- Stir in the chopped walnuts
- Scoop out a heaping teaspoon of dough into your hands, then roll it into a ball shape and place it on a parchment paper-lined baking tray
- Use your fingers to flatten the dough ball into a round cookie shape
- Repeat with the rest of the dough
- Bake in a preheated 375 degree Fahrenheit oven for 10 minutes.
Let cool before serving.
