Berni's Lasagna Soup


 

With the cold weather blowing through it's a great time to break out the hearty stews and warm chillies. This month Berni's given us a recipe for her Lasagna Soup - a delicious make ahead meal for a cold winter night that also tastes great reheated.

Ingredients and Directions

-1.5 lbs ground meat – your choice
-Brown with onions, garlic, salt and pepper.
-Put in crock pot with raw mushrooms and diced red and green peppers.
-Add 1 x 16 oz can each crushed tomatoes, diced tomatoes and tomato sauce along with 1 carton of beef broth
-Season with 1-2 tsp of Italian seasoning.


Cook on high for 4 hours

-Add 2-3 cups cooked noodles of your choice and 2-3 cups raw spinach.
Cook on high an additional 10 minutes.

Serve with shredded mozzarella and add 1 large Tbsp of ricotta cheese to individual bowl.
