Greek Pasta Salad


 
Our recipe this month is one of Berni's favourites... Greek Pasta Salad. Awesome to take for a family BBQ or potluck! Also a super healthy addition to any meal, kids love it so it's a great way to have them get extra servings of veggies.

Ingredients:
  • 1 box cooked whole wheat pasta (I like bowtie or fusilli)
  • ½ cup of each cut in loonie size pieces: red onion, red & green pepper, cauliflower, broccoli and celery
  • Crumbled feta
Steps:

After pasta has cooled, place in bowl along with veggies and cheese. Coat in sundried tomato & oregano salad dressing (any oil and vinegar dressing may be substituted). Mixture should be fairly wet. I like to put an extra sprinkle of oregano and cracked black pepper.

Can be eaten right away, but is best if refrigerated for 2-3 hours before serving. If taking to a potluck, bring along dressing, it may need a touch-up before serving.

Recipe can be modified if you want a smaller/larger salad.
