Banana Bread

 

Beyond being a classic, comforting treat, banana bread is an excellent way to make use of any overripe bananas you may have sitting around (we're all occasionally guilty of banana neglect, don't worry).  If you'd prefer something closer to a dessert, chocolate chips are an easy and satisfying addition.

Ingredients:

  • 3 medium very ripe bananas (I like to use 4)
  • 1/3 cup melted butter
  • 1 tsp. baking soda
  • Few shakes of salt
  • 1/3 cup white sugar
  • 2/3 cup brown sugar lightly packed
  • 1 large egg, beaten (with sugars above)
  • 1 tsp vanilla
  • 1 and 1/2 cups all purpose flour

Directions:

  1. Preheat oven 350 and butter a loaf pan
  2. In a mixing bowl mash the bananas, stir in melted butter
  3. Mix the baking soda, salt with the bananas, add beaten egg and sugar, add vanilla, then mix in flour (can add 1/2 cup of nuts, or chocolate chips - I add 3/4 cup)
  4. Pour into a loaf pan and bake for 50 mins or until a tester comes out clean from the center
  5. Will keep for 3-4 days, roughly a week refrigerated, freezes well.
